I was so excited to get home and make this recipe because I knew it would not only be nourishing, but it would also hit my sweet and salty tooth. Sweet potatoes are so rich in vitamins and kale is rich in minerals and vitamins so I knew I’d have a smash hit in my hands. I loved sauteed kale because it has the similar taste of stewed collards when done properly. So definitely give this dish a try and don’t forget to serve it with my Apple Arugula Salad.
